The product was first test marketed in Spain, and was then launched in limited quantities internationally in 2012. A long held ambition to launch their own gin, Shirley and Duncan Morrison purchased a small thirty litre still and began testing and developing recipes using various botanicals, slowly fine tuning what would eventually become their signature Scottish Gin expression.

The mystical Blue Pea flower and the alluring Rose Pelargonium stand as the defining botanicals in Six Dogs Blue Gin, complemented by Juniper, Naartjie, Angelica, and Coriander. In 2018, Stirling Gin acquired and renovated their own premises, ‘The Old Smiddy’ distillery, which is situated under the same towering walls of Stirling Castle. Putting his years of distillery experience to good use, Duncan renovated an old outbuilding on their family farm, purchased a traditional alembic copper pot still for making spirits and fitted a bespoke column, making for a lighter, yet vibrant gin.

For a dramatic twist, add a blue violet flower, or even a bright orange nasturtium flower, both of which are edible. To complete this Christmas treat, contains High Clandon Gloriana Cuvée 2018 Prestige vintage Brut 750ml, The Essence Liqueur Eau de Vie de Vin 350ml 28%ABV, Wildflower Meadow Honey 340g jar. Mermaid Gin is a smooth yet complex blend of fresh organic lemon zest, the peppery notes in grains of paradise and a hint of sea air from fragrant rock samphire. There are no artificial colours or flavours, it’s simply infused with the Blue Gardenia flower which grows in Thailand. There is little burn in the throat followed by what I am going to describe as ‘a perfumed fade’ of juniper, orange peel and balsam.
